black bean brownies

cooking time: 15mins
makes: 9 - 12 brownies

INGREDIENTS

  • 2 cans black beans (drained and rinsed)

  • 3/4 cup oats

  • 1/4 tsp salt

  • 1/2 cup maple syrup, honey, or agave

  • 1/4 cup coconut oil

  • 2 tsp pure vanilla extract

  • 1/2 tsp baking powder

  • 1/2 cup to 2/3 cup chocolate chips

  • more choc chips, for presentation

METHOD

Preheat oven to 180c.

Combine all ingredients except choc chips in a food processor, and blend until completely smooth. Making sure to really blend well.

Stir through the choc chips, then pour into a oiled 20cm×20cm tin.

Optional: Extra chocolate chips to sprinkle over the top.

Cook for 15-18 minutes, then let cool at least 10 minutes before trying to cut.
If they still look a bit undercooked, you can place them in the fridge overnight and they will firm up.
