golden winter warmer soup

A warming Ayurvedic soup inspired by our most recent RESET retreat down in the Yass Valley at Heartspace. We were lucky enough to take a mindful cooking workshop with the lovely chef (and all round powerhouse of a woman) Angie Cohen.

Ingredients:

  • 1 butternut squash, peeled and cubed

  • 2 carrots, chopped

  • 1 sweet potato, chopped

  • 1 onion, diced

  • 4 cups vegetable broth

  • 1 can coconut milk

  • 2 cloves garlic, minced

  • 1 tsp turmeric

  • 1 tsp ground ginger

  • Salt and pepper to taste

Instructions:

  1. In a large pot, sauté the onion and garlic until fragrant.

  2. Add the butternut squash, carrots, and sweet potato, and cook for a few minutes.

  3. Pour in the vegetable broth and bring to a boil.

  4. Reduce heat and simmer until the vegetables are tender.

  5. Add the coconut milk, turmeric, and ginger.

  6. Use an immersion blender to blend the soup until smooth.

  7. Season with salt and pepper to taste.

  8. Serve hot and enjoy the comforting warmth!
